锅贴乳饼是云南彝族的传统名菜。做法是将乳饼切成块,将鸡肉、肥膘捶成茸泥拌匀后加鸡蛋清、葱姜汁、味精、湿淀粉,拌至发亮成鸡泥。然后在乳饼上刷上蛋清糊,塌上鸡泥,摊平,用火腿、黄瓜皮丝排成花粘在鸡泥上,再刷蛋清糊,上笼稍蒸定型后用花生油煎至熟透即可。此菜形态美观,色泽黄亮,鲜香软嫩,佐酒尤佳。5 W( Z- n: g# e/ k
